Hake steak with perretxikos (mushrooms) and clams

Recipe at the Etxaniz restaurant at the Indautxu hotel in Bilbao.

Ingredients: 300 g (0.7 lb) hake steak, 5 clams, 50 g (1.8 oz) perretxikos for side dish, 50 g (1.8 oz) perretxikos for sauce, a spoonful flour, garlic, fish stock.

Preparation

Sauce: Heat olive oil in a pan. Add garlic slices . Sauté until slightly golden brown. Add perretxikos and a spoonful of flour. Pour in some fish stock. Cook 8 minutes. Crush and sieve to obtain a thin sauce.

Hake steak:Heat olive oil in a pan. Add hake steak, clams and perretxikos . Fry slightly, 1 minute. Add the sauce and cook 7 minutes. Leave the sauce to boil down if necessary. The fish dish is ready to serve.
