“Ranero” club-style codfish

Ingredients (4 people) : 1 ½ l (5 cups) "La Gitana" virgin olive oil, 4 cloves garlic, 4 slices codfish , 225 g (8 oz) each, 1 onion, 1 green pepper, 1 red pepper, 2 tomatoes.

It is prepared like pil-pil but making the ranero, (the vegetable stew without courgettes) first. Chop onion into small cubes; fry gently. Add red pepper, then green pepper and finally peeled tomatoes (to peel them easily, cut around the stem end and draw an X at bottom end, then pop into boiling water for a few seconds).

Add abundant oil to vegetable mixture so that its flavor permeates the mix. Do the codfish in the casserole and stir, adding the oil in which vegetables and garlic have been fried. You'll see that the stew looks like pil-pil, a bit reddish.Finally, spread the vegetables over the codfish -the "ranero" club-style codfish is ready to enjoy!
