Ingredients (4 people): a handful watercress or lamb's lettuce, 100 g (3.5 oz) goat cheese, 4 nuts, raisins, 6 spoonfuls olive oil, 2 tablespoon sherry vinegar, a teaspoon Dijon mustard, salt and pepper.
Preparation Rinse fresh watercress. Cut cheese into small cubes.
Sauce: In a bowl, mix olive oil, vinegar and mustard. Beat well. Add salt and pepper.
Salad Presentation: Place cheese at the center of the plate. Put watercress surrounding cheese cubes. Decorate with nuts and raisins.
